Piazoo: Traditional food of Iran’s Zanjan city

Piazoo is one of the oldest traditional foods usually made for dinner on winter nights in the Iranian city of Zanjan.

Piazoo is one of the oldest traditional foods usually made for dinner on winter nights in the Iranian city of Zanjan.    

Looking like broth, Piazoo is made by mixing onion, walnut, meat, tomato, lentils, split peas, and apricot leaf.

The fried potato will be added to it too. Cooking this old and traditional food of Zanjan is considered an art between families in Zanjan.

Ingredients needed:

1 cup of lentils

2 onions

1 cup of dried apricots and cherry plums

2 spoonfuls of tomato paste

2 spoons of wheat flour or ground walnuts

Oil, salt and turmeric: As much as necessary

Recipe:

To begin with, dip the dried apricots and cherry plums in warm water and leave them for some time.

After chopping the onions, fry them in a little oil. Then, add wheat flour or ground walnuts to it. Slowly, add tomato paste, salt and turmeric; and for the last step, add lentils and enough water. Then, put the meal in the oven to boil with the medium heat.

When the food is cooked, add the apricots and cherry plums so that their sour taste gives a special flavor to the food.
